Dr. Mavis Owureku-Asare is making ground-breaking strides in food science and agriculture, with a prime focus in empowering smallholder farmers, especially women. Her research on solar dehydration for preserving tomatoes plays a huge role in Ghana’s revolutionary post-harvest management.
